Forest-fed goat
As fans of grass-fed beef know, what livestock eat is of great importance for the health of humans and environment. Our goats are raised in the forest with constant access to their natural diet of mineral rich tree-leaves and browse. We believe this makes a big difference to the way our goat meat tastes and the way that it nourishes you!
"Browse" is a term describing woody shrubs and trees that are the preferred forage of goats and other browsing animals (deer, camels, giraffes.. :). ). Many farmers raise goats on grass because of the difficulties of fencing the thorny scrubby areas that goats prefer. We bear the thorns to provide the goats their favorite foods.
We have a full range of USDA on-farm harvested goat meat available. We are also excited to have select cuts (mince and chops) available at the Bellair Farm barn store!

RECIPE! Goat shank tagine
Inspired by Sabrina Ghayour’s amazing cookbook Persiana
- Over medium heat: Fry onions and garlic in a pan with oil
- Add spices: cumin, turmeric, cinnamon, salt
- Brown shanks all over in the same pan
- Add: Canned or fresh tomatoes, 2 bay leaves, thyme, splash vinegar
- Add: water or other liquid to cover meat (broth, whey, or milk would work!)
- Reduce heat to low simmer
- Cook for 2 hours
- YUM!
